The Tower Shiraz is named after the Tahbilk's iconic lookout style tower that played an integral role to Tahbilk's early winemaking years. The blending of cool-climate spicy fruit with mild climate full-bodied fruit has produced a rich, elegant Shriaz with supple tannins & great length. This red is an excellent tribute to the Tahbilk estate, one of Australia's most beautiful and historic properties.
The Guesser Red is a vegan friendly, biodynamic organically grown blend of Shiraz, Grenache, & Cabernet Sauvignon that offers fantastic value drinking.

Wanderer is made using a few different vintages of Petit Verdot, a grape variety which hails originally from Bordeaux. This allows us to create a blend with complexity and freshness.
Later ripening Petit Verdot from our vineyard block up near cellar door is gently picked before being taken down the hill to the winery to be crushed before undergoing open fermentation. Once through ferment, the PV is pressed off skins and sent to stainless steel vessels. It doesn’t spend any time in oak, as we want to retain the wonderful dark fruit vibrancy of the variety. In a similar vein to the Spring Seed Blanc de Blancs (Gypsy), the Wanderer is sent off after ferment and ageing on the vinous equivalent of a Grand Tour to find its fizz. In this case, the Wanderer is sent up to a winery in the Barossa, whereas the English Gentleman in the 17th and 18th Centuries went off around Europe to learn about classical antiquity and mix with the great families and houses on the continent. The Wanderer then returns home, enlightened and ready to be sent into polite society to be enjoyed. By you, that is.
‘Wanderer’ is an elegant yet full bodied sparkling red made using our own home-grown organic Petit Verdot. It has a vibrant bright purple colour, with a nose ripe with blueberries, plum, black cherry and a hint of violets. It is perfect as an aperitif or can enjoyed with a variety of food. Serve chilled.
Our twenty-second release of The Fergus is named after our neighbor who was good enough to sell us his Grenache grapes in the vintage of 1993, during a desperate shortage of Shiraz and Cabernet.
We quickly realized that a wine born from logistics had real potential as a medium, but soft style with immediate food compatibility.

The consumer market demand has been growing steadily for Preservative Free/Natural wines. As leaders in organic production, it was obvious that Paxton needed a product for this category. In addition to Natural, PF & Organic, we wanted to make a young, drink NOW style Chardonnay that was different from our existing Chardonnay style.

The 2019 Puritan is bursting with life, as it should be, given it has barely time to turn around from being picked, fermented and then put immediately to bottle. There are soft plums on the nose & the palate is utterly delicious with black & red fruits, soft tannins & a wonderful finish; have with a juicy steak.

Cabernet Sauvignon has long been recognised as an excellent, consistent variety that performs well in the Clare Valley. The addition of Malbec adds to the complexity of the mid-palate contributing violet, mulberry, added texture and richness.
